This is where the chefs of Brisbane eat when they’re not feeding you. The Nest is a yakitori bar, and if you want a particular northern experience, walk from the city across the river into the hipster village of West End for a pair of playful skewers, a draft Japanese beer or a couple of hot shots of sake.
Cooked to juicy perfection over traditional binchoutan (white charcoal), the skewers are seasoned with shio (salt) or a sweet tare (sauce). Yakitori are traditionally made with fowl, and Bird’s Nest has an elegant sufficiency of chicken on a stick, but there is also a full set of vegetarian options, and some obsessives gorge themselves entirely on Murray Valley pork belly.
