The Inside Coop
Meet the team behind Brisbane’s best Yakitori restaurant!
Born in Sapporo, there’s nothing Maya loves more than getting stuck into a serving of our signature karaage. When she’s not brightening up the restaurant with her gorgeous smile you might catch her watching movies or cooking up some homestyle Japanese treats like omurice.
Don’t let the smile fool you, when Hiroki gets in the kitchen he’s all about the serious business of cooking. Hailing from Gifu, right in the center of Japan, this self professed music lover knows exactly where he stands on the Asahi vs. Sapporo beer debate – he chooses Kirin every time.
Always up for an adventure, cheeky Yuki loves nothing more than exploring new places and trying new flavours. Her guilty pleasures include unwinding at the bar and tucking into our house made Leba Pate, which doesn’t come as a surprise considering her favourite Japanese phrase is “onaka suita” (I’m hungry!).
Born and bred in sunny Brisbane, our veteran supervisor Nick has been nesting with us since we opened our doors! When he’s not busy taking care of our team – and sneaking chicken karaage from the kitchen – you might find him unwinding with friends devouring his favourite Korean food.
As multitalented as she is multilingual (she speaks Japanese, English and Korean), when Hana isn’t hard at work or studying then she’s putting us all to shame at the gym! But that doesn’t mean she’s all work and no play, she loves nothing more than snacking on our slow cooked pork belly and sneaking a little extra ice cream after midnight – but shh, don’t tell anybody.
Always fanning the flames of fun, our talented grill man Yuichi hails from the pristine beaches of Fukuoka – so there’s really no need to guess where you’ll find this keen fisherman on his days off! Put a fishing rod in one hand and a slice of pizza in the other and you’ve got yourself one happy chef.
A natural born foodie, when Tomoya’s not hanging out in our kitchen you’ll catch him cooking up a storm at home. This native of Saga, Japan, loves nothing more than tucking into a serve of our crispy atsuage tofu and a cold Sapporo on a hot day.
Talented Daiki Wakabayashi is not only Bird’s Nest’s head chef but also an expert sommelier. Blessed with a golden palate and the appetite to match, his attention to detail has set him apart in the field!
